Fall Recipe: Pumpkin Swirl Bread

Pumpkin recipes are the most popular Fall recipes. This recipe for Pumpkin Bread has a surprise: cream cheese swirls! Try it for your next autumn gathering.

Filling:

6 oz. low-fat cream cheese

1 Tbsp. flour

1 cup sugar

1 egg

Batter:

1 c. canned pumpkin

3 eggs

½ c. unsweetened applesauce

1½ Tbsp. oil

2 2/3 c. flour

2 c. sugar

1 ½ tsp. baking soda

¾ tsp. salt

¾ tsp. ground cloves

¾ tsp. ground cinnamon

2/3 chopped walnuts

Combine cream cheese, sugar, flour and egg, set aside. Beat pumpkin, eggs, applesauce, and oil. In a separate bowl combine flour and the other dry ingredients and add to the pumpkin mixture. Stir in 1/3 cup of walnuts. Divide half the batter between 2 loaf pans (8”x 4” x 2”) coated with cooking spray. Spread filling in each pan. Top with remaining batter and sprinkle remaining walnuts over tops. Bake at 350° for 40-45 minutes or until done.  Cool for 10 minutes before removing from pans. Refrigerate any leftovers. Yield: 2 loaves.
